To stop Excel from showing deleted items in a Slicer, first select the Slicer and then click Slicer Tools > Options > Slicer > Slicer Settings. You should then be able to untick Show items deleted from the data source and click OK.
  • Items with no data to show will persist through on your slicers, so if you don’t want to show them you’ll have to check that box. Doing this will gray out the next two options. However, if you don’t check that box, you can choose to visually indicate items with no data.

To add a slicer: Select any cell in the PivotTable. From the Analyze tab, click the Insert Slicer command. A dialog box will appear.
It is possible it may extend below your actual data and that will cause a blank to show in the pivot values. To cross check, add the field in question to a "Report Filter" field and drop down the list of values. You will also see the blank value there as well. Think of a slicer as a visual representation of a Report Filter field.
